Rosebud Benitez, formerly with Ka-Toque on QTV, now has her own show: Quickfire. I blogged about her before. I’m blogging again about her because she’s so “nice”. Sorry for the trite expression but for want of a better one, it will have to do. One of her recipes, a steak one which she did with Tessa Prieto Valdez, said “salt and pepper and Umami to taste.” So I sent her a Personal Message here. She answered my question. She said for 450 gms of steak or two pieces of steak each weighing 225 gms, I should use 1/2 tsp salt, 1 and 1/2 tsps pepper and 1/8 tsp umami. Normally, most chefs would refuse to give exact figures when asked but she complied with my plea to give exact figures. Wasn’t that nice of her?
For the first time today, I saw a replay of one of her past episodes, the one where she came out with a salmon recipe for Mike Enriquez. I hope replays won’t be too frequent?
