Mint Capped Brownie Cookie CUps

48 KIsses (Mint Truffles)

2/3 c butter

1.25 cups sugar

1 tbsp water

1 tsp vanilla

2 eggs

1.5 c flour

1/2 c flour

1/2 tsp salt

1/4 tsp baking soda

powdered sugar

Heat oven to 350 degrees. Line 48 muffin cups with paper or baking cups. Remove wrappers from chocolate.

Beat butter, sugar, water and vanilla. Add eggs.

Stir together cocoa, flour, salt and baking soda. Add to sugar mixture.

Refrigerate dough till firm

 

Shape dough into 1-inch balls and put in prepared muffin cups.

Bake for 11 to 13 minutes until cookie surface is set.

Cookies will appear soft and moist. Do not overbake.

Cool 5 minutes on wire rack.

Press chocolate onto cookie.

Cool completely.

Sprinkle with powdered sugar.

Saw this recipe in the pack of kisses I bought around December 2012. I was apprehensive about the quality 8 months later, seeing that it had been languishing since. Its companion chocolates had since been consumed. But wow, lo and behold, it tasted like the pack was recently bought.

Some chocolates aren’t as considerate.

I haven’t yet tried the recipe. Sounds good, right?
