Kimchi Rice and then some.


With leftover pajeon and galbi jim from the Sunday entrees ordered in Galbi Shang, but no more dolsot bibimbap, I decided to add homemade kimchi rice to dinner last night. Recipe from http://www.maangchi.com/recipe/kimchi-bokkeumbap:

Ingredients:

  • 3 bowls steamed rice (3 cups)
  • 1 cup chopped kimchi
  • ¼ cup kimchi juice
  • ¼ cup water
  • 2-3 tablespoons gochujang
  • 3 teaspoons sesame oil
  • 1 teaspoon vegetable oil
  • 1 green onion, chopped
  • 1 tablespoon roasted sesame seeds
  • 1 sheet of kim, roasted and shredded

Had HHA buy a bottle of Kimchi from Rustan’s, still had gochujang so that was all right. As for the sheet of kim, I recalled son’s having bought a pack from DEC’s in Eastwood months back so used a pack to top the rice with. 

Still not in the pink of health, I hesitated and didn’t try the rice because its spiciness I presumed would evoke a coughing fit. But son loved it, finishing all of the rice even after the dishes were consumed. Incidentally, heated with the rest of the Korean entrees last night was some leftover adobo flakes made from Chooks to Go chicken, remember? Son said it went very well with the kimchi rice.

i did take a few spoonfuls of food and tasted sweetness in the galbi jim but not the real flavor of the dish. Hopefully the taste buds resume their function soon otherwise I’ll get thinner (I wish) for sure. A look at the mirror just now revealed a smaller face and a clearer complexion – from the steroids(?) and/or the sloth of illness – I didn’t put any moisturizer on my face the past days. Just washed it with water. Or maybe it’s the rest, though I don’t really think so. Some nights I barely slept from all the coughing.

Must be the steroids. But don’t take me up on that. Steroids can be harmful — they have their benefits as they do their ill effects.
