The first two attempts to do truffle pasta like Mamou’s care of the recipe posted in were successes. Today, I asked HHA to make again.

Alas and alack, she didn’t tell me the Barilla pasta we used in the previous excursions were no more. So she used  Del Monte. And not spaghettini but spaghetti.

What a world of difference. Don’t.

I guess, DM pasta is for red sauce recipes. No wonder almost every time HHA makes carbonara, by the first reheating, I always ask her to add cream or milk as the sauce virtually disappears. And the DM noodles’ taste is so overpowering that the truffle sauce of the pasta prepared this noon was virtually unapparent.

So there.

Tough lesson to learn somehow.
